Look for East African coffees that are “dry processed.”

This is the traditional processing method for African coffees, but it’s a little higher risk for producers because it depends critically on the weather (no rain) during processing.

Dry processed coffees are typically more complex and rich and less acidic than wet processed coffees. (Wet processed coffees are smoother and more brightly acidic, especially African coffees.)

I’ve had a couple different dry processed coffees from Burundi this year that were both outstanding.
